Cranberry Nut Bread

Cranberry Nut Loaf

Note: So very many of our guests have asked for the recipe for our Cranberry Nut Loaf, served with every breakfast, that we decided to provide it here as a public service.

  • 4oz. Cranberries
  • 8oz. Plain flour
  • 11/2 baking powder
  • 1/2 level teaspoon salt
  • 2oz. Butter
  • 1 egg, well beaten
  • 7oz. Sugar
  • 3oz. Walnut pieces chopped
  • Finely grated rind of 2 oranges
  • 5 fl. oz orange juice

Chop cranberries. Sift flour, baking powder, baking soda and salt. Rub in butter, and sugar. Whisk peel, juice and egg. Lightly add to flour. Add cranberries and nuts. Pour into greased loaf tin (9 x 5 x 3). Bake 180C/350F for 1.25 hours. Cool 15 minutes and remove from tin. Cool and cover.
